Making my own sausage is something I've wanted to do for a while. Thanks to Ed, I made my own bratwurst for the first time. Of course I already make frikandells, croquettes, Dutch bitterballen and all other snacks from the Netherlands myself, but homemade sausage not yet.

How do you make your own sausage? Of course, there are a lot of different kinds of sausages, such as grill sausage, bratwurst, smoked sausage, frankfurters, ox sausage, merguez sausages and, of course, salami and chorizo. The list of sausages is endless, but we are making bratwurst in this video.

Below are the ingredients we used for our homemade bratwurst.

500 grams of pork shoulder
500 grams of chuck
10 grams bratwurst seasoning without salt
100 ml ice water
1 gram ground allspice
5 grams ascorbic acid
15 grams coloring salt
2 teaspoons garlic powder
20 grams of skimmed milk powder
5 grams of phosphate
Fennel seed
Pig intestines size 30/32
Cotton cord Red/White 32 thread

What is ascorbic acid used for? Ascorbic acid or sodium ascorbate E301 is vitamin C, an antioxidant, keeps your meat nicely colored.

What does coloring salt do? Color salt, or colorozo, nitrite pickling salt or nitrite salt acts as a preservative, bacteria don't like it and provides a nice color on your sausage.

What does phosphate do? Phosphate provides a good binding of the meat in your sausage.
