Ingredients
3 roasted poblano peppers
3 roasted tomatoes
1 medium onion
2 garlic cloves
2 1/2 cups of water
1 Tbsp chicken bouillon (adjust to taste)
1 tsp Mexican oregano
1 8oz can tomato sauce
1 cup of chihuahua cheese or Mozzarella
Corn tortillas
Oil
sprig of cilantro

Egg batter
6 room-temperature eggs
1/4 cup AP flour (+ 2 Tbsp to coat chiles and cheese)
1/2 Tbsp cream of tartar
Serve with Mexican rice and pinto beans

*recipe yields 10 to 12 cakes/ tortitas
