——-OPA’S SOUP RECIPE (with Michel’s twist)——

INGREDIENTS
-1lb pork sausage
-1 1/2 cup onion
-2 cloves garlic
-3 cans chicken broth
-2 cans diced tomatoes
-1 can butter beans
-2 cups spinach
-1 teaspoon oregano
-1 teaspoon basil
-salt + pepper to taste
-(optional), box of biscuit mix
-(optional), Parmesan to top

STEPS
-brown sausage in oil
-add in onion and garlic, sauté
-add in broth, tomatoes, beans and spices. bring to a boil
-mix and roll dumplings while you wait for the soup to come to a boil (about 1 TBSP of dough per dumpling)
-reduce to a simmer for 15 minutes
-add in spinach until wilted
-serve and top with Parmesan cheese
