It was a freezing cold Winter's Day and we needed a hot meal that would stick to our ribs and be that comfort food for our soul yet still inexpensive and easy!! I found it in a Pork Loin Filet that I had gotten at Kroger and froze in my deep freezer. I had just bought a new Ninja Foodi One Lid with my Christmas Money and I had used it once but I still have not read the manual so the meal had to be something that my old mind could figure out real quick.
I took that Pork Loin, which came marinated in Mesquite, and made a bowl of sauce for it which included about a cup of Sweet Baby Rays Sweet & Spicy BBQ Sauce. Then I added 3 Tbsp of Worcestershire Sauce, 2 caps of Apple Cider Vinegar and 2-3 Tbsp of Syrup. I used the syrup instead of Brown Sugar, which I was out of and the last thing was a cup of water. I mixed that all together and washed some potatoes and cut them into smalled pieces. I added them to the bottom of my Ninja Foodi. Next came the meat, right on top of the potatoes and then I poured the sauce all over everything, locked the Ninja and pressure cooked it for 30 minutes. I let it come down from pressure for 30 minutes and then got it out and wrapped it in aluminum foil for another 30 minutes while I got everything else ready. I had roasted Broccoli and Cauliflower plus a bag of Stir Fry Veggies. Then I wanted to try something new so I decided to make Edamame. Welllllll, I cooked it in the microwave for 6 minutes with a little water and half a stick of butter. YUCK!!! I didn't like it. It was crispy. Let me know how you cook yours and if it is crispy like mine was. Neither Amber nor I liked it. So that was our dinner and it was delicious except the Edamame. Give it a try!!
