Deciding the development percentage for coffee roasting will determine what your coffee tastes like. From the moment first crack begins until you drop the coffee out of the roaster, your coffee is in the "Development Phase". Depending on the length of time and the temperature, your coffee can be sweet and fruity or bitter and chocolaty. Of course there are other influences including total roast time, phase percentages and more!
