🥣 Ingredients:
10oz | 280g | 1 medium size sweet potato
5oz | 150g | 1/2 cup short grain rice
14fl oz | 400ml | 1 can coconut milk

14fl oz | 400ml | 2 cups water
1tbsp sweetener or sugar
1/2tsp cardamon powder
pinch of salt
2tbsp sugar
1tsp ground cinnamon

🧑‍🍳Cooking tips:
❗Feel free to add your favourite spices to the recipe to get your favourite flavour.
❗If you like you can replace sweet potato for banana.
🥣 Method:
Peel 10oz | 280g | 1 medium size sweet potato
Cut sweet potato into 1inch | 2cm slices
Steam for 10 minutes or until tender
Rinse 5oz | 150g | 1/2 cup short grain rice with water
Place rice in to a heavy bottom saucepan
Add 14fl oz | 400ml | 2 cups water
Simmer for about 15 minutes, stirring occasionally until the water is absorbed and rice is tender.
The sweet potato is ready
Add to the rice:
14fl oz | 400ml | 1 can coconut milk
1tbsp sweetener or sugar
1/2tsp cardamon powder
pinch of salt
Mix well
Reduce the heat to low and simmer for 15 minutes stirring occasionally.
ℹ️ If the rice becomes too thick while it’s cooking add more water.
Mix 2tbsp sugar and 1tsp ground cinnamon and coat sweet potato slices in it.
Slightly oil a skillet with oil.
Cook sweet potato slices for 5-7 minutes until the potatoes are tender and caramelised.
The rice porridge should be thick and creamy. Set it aside for 5 minutes.
Add sweet potatoes and enjoy this delicious sweet potato and rice dish! 😋
