[IMPORTANT: Don't harvest the cane until you are ready to juice it or chew it. The cane has high sugar content and will ferment in a week or two and will not be good to eat or drink.] How do you know when to harvest the sugar cane you are growing in your garden. You can harvest any time, but the larger the cane gets, the sweeter it will be as long as it is not exposed to freezing weather. It is the generally accepted practice to harvest when the cane begins to flower as it is generally believed that this is the time the cane has the most sugar. In this video I explain how to recognize when your cane is getting ready to send up a flower stalk.
