This time, I made Stir-fried Julienne Ham and Potatoes with the ham I had at home!
When cooking Stir-fried Julienne Ham and Potatoes, it is always headache that potatoes break down
I'll show you how to cook Stir-fried Julienne Ham and Potatoes without breaking down potatoes!

[Ingredients]

*For blanching potatoes
5 and 1/2 cup (1L) of clean water
2 (400g) potatoes

*Gamja chae bokkeum (Stir-Friend Potatoes)
Entire blanched potatoes
1 can (200g) of canned ham
About 1 and 1/4 of an onion
3 tablespoons (21g) of cooking oil
About 20g of carrots
About 20g of green onion
1/4 tablespoon (3g) of fine salt
Pinch of ground pepper

[Instructions]
1. Julienne the potatoes into roughly 6cm in length and 0.5 cm in thickness.
*Use a mandoline if necessary.
2. Julienne the carrots into roughly 4 cm in length and 0.2 cm in thickness, then julienne the onion into 0.3 cm in thickness.
3. Slice the green onions diagonally into 0.3 cm in thickness.
4. Julienne the canned ham into roughly 4cm in length and 0.6cm in thickness.
5. Add water into a deep frying pan or a pot, bring it to a boil, then add the julienned potatoes and blanch for about 1 minute.
* Another option other than blanching is to get rid of all the moisture of the potatoes with a paper towel so it doesn't break when stir-frying.
* The amount of water might differ depending on the size of the pot or frying pan.
* The time it takes to blanch might differ depending on the thickness of the potatoes.
6. Once the potatoes are blanched, drain all the water using a strainer or a colander.
7. Drizzle cooking oil on the frying pan, add the julienned ham, then stir-fry over medium heat until golden brown.
* Feel free to use more cooking oil for a juicier taste.
* Make sure to cook the ham until golden brown so it doesn't break.
8. Add the julienned onions and stir-fry slightly, then turn up the heat to high, add the potatoes and carrots, sprinkle fine salt, and ground pepper, then stir-fry more.
9. Once the potatoes look perfectly cooked, add the sliced green onions, then place them on a plate to serve.
