One of my all-time favorite recipes for greens and the first recipe I put in my book. As seen on the Today show and currently in print in multiple books, including Dan Buettner's new book on the Blue Zones cooking, my green cakes are one of the most versatile recipes I know of for foragers that harvest and eat their own plants.

I dreamt them up after I noticed that both Sam Thayer and one of my favorite chefs (Jacques Chibois) both had recipes for green patties that were eerily similar. I thought the fact that things like this are served in fancy restaurants, as well as made by foragers was novel, and I've been trying to spread the word about them far and wide. It's just a great way to eat plants that everyone loves-even non foragers and people that wouldn't sit down and eat a pound of cooked plants like my friends and I.

At the end of the day this is just a simple recipe for green cakes-the beauty of it is that you can use basically any leafy green you want. After they're done you can eat them as a side dish, serve them with dip as an appetizer, make them into larger patties and put them on a bun, throw them at people to encourage them to eat plants, etc etc.
