Episode 197 - Time for breakfast!! Kitty loves a good BLT sandwich and breakfast. The best idea is to combine the 2 into a fantastic meal for dinner! Easy to put together and then bake, it is the highlight of an breakfast or in Kitty's case, dinner. So good.

Ingredients
1 Pie Crust
2 C fresh spinach
1 lb cooked bacon, chopped
1 C cherry tomatoes quartered
1 1/2 C shredded sharp cheddar
8 large eggs
2 C heavy cream
1 t kosher salt
1/2 t black pepper

Directions
Preheat the oven to 375°F
Generously butter a 9-inch pie pan and place pie crust into pan
Whisk together eggs, cream, salt and pepper
Layer spinach, tomatoes, cheese and all but 1/4 c of bacon
Pour egg mixture over the top
Top with remaining bacon
Bake for 45 minutes until top is browned and quiche is set
