When you need a super quick and easy treat made with minimal, wholesome ingredients, give these Healthy Oatmeal Cookies a try! They’re naturally sweetened with bananas and dates and they’re healthy enough to enjoy as a snack, quick breakfast on-the-go or dessert. These little treats are oil-free, egg-free, dairy-free, gluten-free, have no added sugar and are just simply delicious!

For 12 cookies

2 cups of quick oats (200 g)
2 ripe bananas
1/4 cup of peanut butter (60 mL)
1/2 cup dates chopped (65 g)
1/4 tsp cinnamon
A pinch of salt

Preheat the oven to 375˚F (190˚C).
In a bowl, mash the banana with a fork.
Add the peanut butter, dates, cinnamon, salt and mix again.
Stir in the oatmeal*.
Using a small ice cream scoop, spoon 12 balls of dough on each baking sheet, spacing them out evenly. Flatten the balls with a spoon or with your fingers.
Bake for 20 minutes or until lightly browned all over.

*You can also grind the oatmeal in a nutrition bullet, magic bullet or Vitamix before incorporating it to the mixture. In this case, you can use rolled oats.
