Join me as I recreate Mom's tender and flavorful calf liver casserole, a dish that not only satisfies the taste buds but also nourishes the body. Remember, maintaining a healthy and diverse diet is key to overall well-being, and this dish is the perfect way to start.

Ingredients:
- 1 lb (500 g) Calf liver, thawed
- ¼ cup (60 ml) Milk
- 1 large Onion, coarsely chopped
- 2 Carrots, grated
- 2 cloves Garlic, finely chopped
- 16 oz (500 g) Mushrooms, finely chopped
- 3 oz (100 g) Semi-hard cheese, grated
- Preferred spices (such as salt, black pepper, paprika, and dried dill)

Instructions:
1. Prepare the Liver:
- Defrost the calf liver. For easier cutting, keep it slightly frozen. Cut it into cubes or strips.
2. Sauté the Onion and Liver:
- In a skillet, heat olive oil over medium heat.
- Add the chopped onion and fry until golden.
- Add the cut liver to the skillet along with the preferred spices (salt, ground black pepper, paprika). Fry until the liver changes color.
3. Cook the Mushrooms and Carrots:
- Finely chop the mushrooms. Fry them in the skillet to remove excess liquid and shrink them.
- In the same skillet, fry the chopped garlic until golden brown. While it’s cooking, grate the carrots and add them to the skillet.
- Add chopped mushrooms to the skillet. Season with salt, dried dill, and ground black pepper. Cook until all the liquid evaporates.
4. Assemble the Casserole:
- Preheat the oven to 375°F (190°C).
- Place the cooked liver and onion mixture as the first layer in a baking dish. Pour milk over it to make it soft and tender.
- Add the cooked mushroom and carrot mixture as the second layer, ensuring an even spread.
- Cover the baking dish with foil.
5. Bake the Casserole:
- Put the baking dish in the preheated oven and bake for 30 minutes.
6. Add Cheese Topping:
- After 30 minutes, remove the foil from the baking dish.
- Sprinkle the grated cheese evenly over the casserole.
7. Broil the Casserole:
- Broil the dish until the cheese is golden brown and bubbly.
8. Serve:
- Serve the liver casserole hot with buckwheat and sauerkraut.
- Use the juices from the casserole as gravy to moisten the buckwheat.
