Join Council officer Donna as she shows you how to whip up a family favourite in her household, her vegetarian tacos! Don't let the ingredient list scare you, most of the ingredients you'll likely already have in your cupboard!

BAKED CAULIFLOWER INGREDIENTS
1 cauliflower (cut into florets)
Panko crumbs
½ cup cornflour
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
¼ tsp turmeric
½ teaspoon salt
1 tbsp. coconut oil
1 tbsp. peanut butter
1 tbsp. maple syrup
2 tbsp. soy sauce
½ tbsp. hot sauce
Olive oil spray

YUM YUM SAUCE INGREDIENTS
1 tbsp. coconut oil
1 tbsp. tomato paste
½ tsp garlic powder
½ tsp paprika
1 tsp maple syrup
1 full cup mayo (can use vegan mayo)

OTHER INGREDIENTS
1 can refried beans
1 pack corn tortillas (or tortillas of choice)
Coleslaw bag from supermarket

METHOD
Step 1: Cut the cauliflower into florets
Step 2: Mix panko, cornflour, cumin, paprika, garlic powder, turmeric and salt
Step 3: Melt coconut oil, peanut butter, maple syrup, soy & hot sauce in a saucepan until mixed together and warmed through. Coat the cauliflower in this syrup mix and then coat them with the panko dry mix.
Step 4: Line & spray an oven tray – place coated cauliflower on the tray and place in an oven preheated to 200 degrees Celsius and bake for 30 mins, until golden brown.
Step 5: While the cauliflower is baking make you Yum Yum sauce. Mix together the coconut oil, tomato paste, garlic powder, paprika, maple syrup and mayo. If it’s too thick, add a small amount of water to reach your preferred consistency.
Step 6: Reheat the can of refried beans in a small saucepan
Step 7: Reheat tortillas in a pan or microwave, remove your cauliflower form the oven and put your tacos together.
Step 8: Layer cauliflower, beans coleslaw and yum yum sauce & enjoy!
