In today's video I am finally cooking up some no wrap ribs! I have wanted to do this recipe for quite some time, mainly because I have wanted to make this amazing mop sauce recipe, and make some mopped ribs! This mop sauce recipe is coming straight from Rodney Scott's World Of BBQ book, which I cannot recommend enough! From recipes, to BBQ stories, this book is one I couldn't put down! Back to ribs, I cooked these ribs on Traeger, used my rub, and used the mop sauce while they smoked the entire time! There was no need for a wrap, and these mopped ribs were AMAZING! Perhaps some of the best ribs I have personally ever had! You gotta try these no wrap ribs and this amazing mop sauce recipe!

Smoked Baby Back Ribs Recipe:

| Ingredients |

-1 rack of St. Louis Cut or Spare Ribs
-Ash Kickin' BBQ Honey Chipotle Rub (link below)
-Tailgater's BBQ Party Rub (link below)
-Distilled White Vinegar-exact measurements below
-Red Pepper Flakes-exact measurements below
-Cayenne Pepper-exact measurements below
-Coarse Ground Black Pepper-exact measurements below
-White Sugar-exact measurements below

| Instructions |

Prep:

1. Remove ribs from packaging, pat dry, and trim off any loose ends or hard fat.

2. Remove or score the membrane on the bottom of the ribs.

3. Season the bottom side of the ribs first with Party Rub, then apply a heavier coating of Honey Chipotle.

4. Flip the ribs over and repeat the process on the meat side.

5. Allow 10-20 minutes for the rub to start sweating into the meat.

To Make Rodney's Mop Sauce:

1. Bring 1/2 gallon of distilled white vinegar to a temperature of 150º F.

2. Once the vinegar is 150º F, add one half of a lemon sliced thin, and then let the lemon steep for approximately 5-10 minutes or until the lemon slices are wilting,

3. Once the lemon slices are wilting, add the following ingredients:
-1 cup of white sugar
-1/4 cup of coarse black pepper
-2 Tablespoons plus 2 Teaspoons of cayenne pepper
-1/2 a Tablespoon plus 1 Teaspoon of red pepper flakes

4. After these spices have been added, continue whisking and stirring until all the sugar has dissolved and the sauce reaches 190º F. Once 190º and the sugar is dissolved, remove from heat and let cool. Remove the lemons and the sauce can be refrigerated in an airtight container for up to 8 weeks.

| Cooking |

1. Set the temperature to 250º F.

2. Put the ribs on the smoker and let them smoke for 1-1.5 hours.

3. Once the rub has set begin mopping the ribs, and repeat the process every 30-45 minutes until the ribs are done.

4. Once the ribs are tender, mop one final time and take the ribs off the cooker to rest.

5. Once the ribs have rested, slice, eat, and enjoy!
