Great bread and conversation starter.
DOUGH INGREDIENTS:
5 g instant dry yeast
8 g salt
40 g granulated sugar
500 g strong flour / bread flour (12.5% protein)
20 g olive oil
280 g water
TOPPINGS*:
Tomato passata or crushed tomatoes
Olive Oil
Red Chili Flakes
Dried oregano
Black olives
Sea salt
Sliced raw onions
Cubed mozzarella
*All amounts are to taste
PROCEDURE:
1 - Into a large bowl, add yeast, salt, sugar, flour, mix to combine;
2 - Make a well and add oil and water;
3 - Mix, then knead dough without adding any flour on your surface until the dough is somewhat smooth, then cover with bowl and let rest for 10 minutes;
4 - Form a tight ball and allow dough to ferment until it doubles in bulk;
5 - Prepare toppings, tray, etc;
6 - Degass your risen dough by making it into a rectangle, then cut it in half and each half in half, and each half in half, in such a way that you end up with eight flat rectangular pieces;
7 - Flatten each piece and stretch it, forming a long and thin strip, then place them in the baking tray;
8 - Apply toppings, allow to ferment, then bake at 180ºC / 350ºF until done.
