Bleeding your fish as soon as you catch it is one of the most important things in the quality of the meat. Blood is a substrate for bacteria to grow and make the fish go bad quicker. The lactic acid build up in the blood from stress when the fish is being caught can be a bad thing for the taste of the meat. The sooner the fish is bled and killed, the better the meat will be.
