Spinach Pie with Puff Pastry and Phyllo Cups

1 yellow onion (diced)
1 tbsp Oil
20 oz Spinach (chopped)
2 cups Ricotta Cheese
8 oz Feta Cheese
8 oz Pepper Jack Cheese
2 Eggs
2 tbsp Parsley
1/2 tsp Salt
1/2 tsp Black Pepper
Puff Pastry Sheets
Phyllo Cups

Peel and dice one yellow onion. Wash and chop 20 oz of Spinach

Add oil to a pan over medium heat, add the diced onions and cook until softened about 5 minutes or so, mixing periodically. To a mixing bowl add the eggs whisking until the yolk and whites are well combined. Then add the feta, pepper jack and ricotta cheese, spinach, parsley, cooked onions, salt and pepper. Mix and add to puff pastry or phyllo cups.

Cut and fill a puff pastry sheet into squares (for bite-sized) or fill a sheet of puff pastry (for a full sized pie) with the spinach mixture. Another awesome option is to add phyllo cups to a muffin pan, fill with the spinach mixture.

Bake the puff pastry spinach pie at 400°F for 25 minutes. Bake the phyllo cups at 350°F for 15 minutes.
