1 Pork belly barriga de cerdo.
Orégano seco
Sage // Orégano poleo
Cumin// Comino
Garlic
Black pepper
Coriander
Culantro
Scallions
Salt

Butcher your pork belly, to make sure is even on all sides. Make holes with a knife or a sharp edge, small wholes. This will help cook everything evenly and crispy, butterfly the meat or score to make sure seasoning gets into the meat, season well, and roll tie with butcher twine season the skin with only salt and set in the fridge uncovered over night or 24 hours for best flavor, and for the skin to dry up, set oven to 300f and cook covered for 1-2 hours or untill fully cooked with a bit of water in pan for your sauce, now take out poor the pan juices in a pot to reduce and let the porchetta rest, you can even finish it the next day. Because it is fully cooked all we have to do is get it crispy, once rested set in pre heated oven at high untill fully crispy, checking every now and then to make sure not to burn, also wherever it is crispy cover with aluminum foil so it won’t burn while waiting for the next part to get crispy. Take out the oven once crispy, and rest to take the strings off and cut, serve with, rice potato’s, plantain salad ext, enjoy.
