for the filling-
200g sugar
50g cornflour
250ml water
4 egg yolks
125ml lemon juice
50g butter

for the meringue-
4 egg whites
105g sugar
1 tbsp cornflour
1 tsp water
1 tsp white vinegar – or ½ tsp cream of tartare
