This is a recipe I developed myself at the request of an Optavia member. This fits the lean and green guidelines if you are on 5&1, 4&2, or any Optavia program. It is also just plain good and healthy no matter what your diet or lifestyle may be - gluten free!!

Cabbage “Spaghetti”
6 servings (approx. 14 oz. per serving): 1 Lean, 3 Green, 3 Condiments

1 lb. lean ground beef
1 lb. ground pork
1 C. part-skim mozzarella
1 28 oz. can whole tomatoes, pureed
400 g. cabbage, cut in half and sliced into thin shreds
4 cloves garlic, minced
4 t. dried basil leaves
2 t. dried oregano leaves
1 t. salt
1/2 t. red pepper flakes
1/2 c. reduced fat parmesan cheese

Cook ground beef and ground pork until no longer pink.
Add in minced garlic and cook 2-3 minutes until garlic is fragrant.
Combine tomatoes, basil, oregano, and salt. Stir into meat mixture. Allow to simmer for 5-20 minutes at least to allow flavors to develop and sauce to reduce slightly. Keep only partially covered.
Add in shredded cabbage. Stir to combine then cover and allow to steam for 15-20 minutes.
Stir in red pepper flakes before serving.
Top each serving (about 14 oz. each) with approx. 2 1/2 T mozzarella cheese (about 2/3 oz) and 1 1/3 T. parmesan.
