Chicken and corn chowder soup is the perfect comfort food for the winter season. You can make the corn chowder in an instant pot or any pressure cooker. Chicken and Corn chowder soup is hearty and filling. It's definitely a crowd pleaser. I basically check in my fridge what kinds of vegetables I have remaining and throw it in the chowder soup. Feel free to add whatever veggies you like. This a simple and basic chicken and corn chowder soup. This ends my 12 Days of Christmas Series. Chicken and Corn Chowder Soup:
1 TBS cooking oil
1 packed of bacon, sliced
3 large potatoes, cubed
4 carrots, cubed
2 celery sticks, sliced
1 yellow onion, sliced
1 green bell pepper, cubed
2 cloves garlic, minced
2 (15 ounce) can corn
1.5 lbs chicken breast, cubed
3 cups chicken stock or broth
1 1/2 cup half & half or heavy cream
3 TBS cornstarch
2 heaping cups of shredded cheddar cheese
1/2 tsp thyme powder
1/2 tsp oregano powder
1/4 tsp cayenne powder
Salt & Pepper to your liking
Optional: Garnish with bacon bits, green onions, and extra cheese
