Does size really matter? Well, let's run a few test and find out....
In an offset smoker, the fire creates the heat, but the smoke stack is engine of airflow. If it's too short, too narrow or too small, it hinders the smoker's ability to create good convection. Join me as we seek to find a way to improve the airflow, convection and use of a $400 Old Country BBQ Pits Pecos with the help of a $12 piece of stove pipe and a clamp.
