56g . . . Cake flour
‣Mascarpone filling
5g . . . . Gelatin powder
25g . . . Milk
2 Egg yolks
40g . . . Sugar
65g . . . Milk
250g . . Room temp mascarpone cheese
150g . . Whipping cream
10g . . . Sugar
‣Simple syrup
15g . . . Sugar
25g . . . Hot water
‣For the top
Icing sugar
Matcha powder

▷Cook Time
‣Matcha Sponge Cake：Bake it at 320°F /160°C for 30-35 minutes.
‣Matcha Tiramisu Cake：Refrigerate for at least 4 hours before slicing.
This tiramisu does not include alcohol, so anyone can enjoy ♪

▷Storage
Keep in an airtight container and store in the refrigerator for up to 2-3 days.

★Notas
Thermal kill of Salmonella occurs when at temperature of 160°F/71°C is maintained for 2 minutes, instant thermal kill of Salmonella occurs when the egg reaches a temperature of 165°F/74°C.
