Ingredients:
500gms Crabs (approximately)
1 medium Onion
1 Green Chilli
6-7 cloves Garlic
1-inch piece of Ginger
1/4 tablespoon Turmeric
Salt, to taste
Pinch of Black Pepper
1/2 tablespoon Oil
Small bunch of Coriander Stems
Method:
Clean the crabs with a brush to remove all mud present on the crab shells.
Cut the crabs into various sizes: big, medium, and small. Wash them thoroughly and soak them in water for 7-8 minutes to remove any remaining mud.
Make a paste of ginger, garlic, onion, and green chili.
Grind all the small crab parts to make a fine paste.
Heat oil in a kadai (Indian wok), add the garlic-onion paste, and sautรฉ for a couple of minutes.
Add the crab paste and sautรฉ for another minute.
Mix in all the remaining crab parts in the kadai.
Add salt, turmeric, and 2-3 cups of water, ensuring all the crabs are covered.
Simmer for another 7-8 minutes.
Strain the crabs and stock separately using a strainer.
Add crushed pepper to the stock according to taste.
Pour the stock into serving bowls and add 2-3 pieces of crabs to each bowl.
Garnish with chopped coriander.
Serve hot.
