Nixtamalizing corn, and making hominy using ash is not that difficult. Here @AuthenticGardening we made a simple step-by-step video describing the process. BUT: one mistake is made in this video, making it more difficult to use the prepared corn. Here are the steps described in the video:
1. Select your corn and peel kernels off the cob.
2. Wash the kernels and place them in a stainless steel pot.
3. Add finely sifted ash from hardwood.
4. Add water.
5. Bring to boil and cook 1-1.5 hours, till the kernels are semi-soft and their skins peel off easily.
6. Drain the liquid.
7. Rince the kernels thoroughly. [Because I boiled corn WITH ash, it is difficult to rinse out the ash entirely. The correct way is to boil ash in water first, preparing the alcaline solution, then to separate solution from ash and use that to cook corn WITHOUT ash.]
