These Beef Enchiladas could very well be one of my signature dishes, or so my family says. Traditional Tex Mex enchiladas are very popular in South Texas and its probably the most popular dish on the menu. My Enchilada Sauce is probably the best tasting i think and its super easy to prepare, i love filling my Beef Enchiladas with ground beef, chopped onions and freshly grated American Cheese. American cheese gives these enchiladas the best flavor, but you can use cheddar, Colby Jack or your favorite cheese, I've used them before and are delicious too. the good thing about this dish is you can prepare them with ingredients you probably already have at home, and i know you and your family will love them. I hope you give this recipe a try.

INGREDIENTS-----------------------------
375° 20 Minutes covered and last 10 minutes uncovered (or till bubbly)
1 lb. 80/20 Ground beef (drained )
2 Tbsp Butter
1 Tbs Canola (or your favorite)
3 Tbsp All purpose flour
1 1/2 Tbsp Chili powder
2 tsp Paprika
1 tsp Onion powder
2 tsp Garlic powder
1/2 tsp Ground cumin
1/2 tsp Mexican Oregano
1 1/2 tsp Chicken Bouillon
2 tsp Tomato paste
Salt and pepper for beef
3 1/2 C. Chicken broth
10 Corn tortillas or as needed
1 lb Freshly grated American Cheese or other

Extras-------------------------
Pico De Gallo
Refried Beans
Mexican Rice
