Some Folkore and Magick for Spring. The weather has been amazing. I know, I should have taken some footage, but I had so much reading in the garden to do! And it lasted for so short a time. But it's a good time to go out and start foraging if you are into that kind of thing. Many of the plants that grow at this time of year are great to detox, like cleavers, dandelions, and of course nettles.

Nettle Soup Recipe

1 tbsp Olive Oil (Extra for drizzling)
1 Onion
1 Carrot
1 Leek
1 Potato
1 Litre of Vegetable Stock (or cube)
400g of stinging or dead nettles (or a large bundle of...)
50 g of butter (small cubes melt faster)
50 ml of cream (double, or I used single)
Dead Head Nettles to garnish

Wear Washing Up gloves when picking and Handling. Wash the nettles or blanch for a minute in boiling water if you want to then chop them finely to remove the sting.
Heat oil on a medium heat and add the finely chopped vegetables. Cook for a bout 10 mins to soften. Add stock and cook for another 10 or 15 minutes til potatoes are soft.
Add the nettle leaves and simmer for a minute or two til wilted, then blend the soup.
Add the butter and cream, and season to taste, heat gently until the butter has melted.
Serve with a garnish or young dead nettle shoots, and / or a drizzle of Olive Oil.
