FALAFELS
-----------------
280g firm tofu
4-5 large mushrooms
1/2 large onion
A handful of coriander
2 tbsp chia seeds
1.5 tbsp cumin seeds
1 cup ground almonds
1-2 cloves garlic
1 tsp salt
Black pepper
DIRECTIONS:
1. Mix all ingredients for falafels in the food processor and blend well.
2. Divide the mixture in 12-14 portions and form each portion into a ball shape.
3. Place the falafel ball onto a generously greased baking tray (I use coconut oil). Cover all the falafel balls with coconut oil by rolling them on the baking tray.
4. Bake the falafels in 200C/400F preheated oven for about 30mins (flip a couple of times in between)
5. Take the tray out and leave the baked falafels to cool for 10-15mins before consuming.

LAZY CASHEW HUMMUS

1/2 cup unroasted cashew nuts
Juice of 1 lime
1-2 cloves of garlic
3tbsps good olive oil
Flat leaf parsley
Salt and black pepper to taste
Water (if required)
DIRECTIONS:
Mix all ingredients in a food processor till smooth. Add some water to loosen the mixture if desired.
