Make your everyday pancakes a little bit better! Try these banana cottage cheese pancakes from Women of Today founder, Camila Alves McConaughey. These pancakes feature H-E-B Mootopia Lactose-Free Cottage Cheese and gives you the option to be creative with toppings!

Serves 4

Ingredients
1 cup of H-E-B Organics quick-cooking oats
1 banana
1/2 cup H-E-B Mootopia Lactose-Free Cottage Cheese
2 eggs
2-3 tablespoons almond milk
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1 tablespoon H-E-B Organics Maple Syrup

Avocado Oil – for the griddle

Toppings:
Banana slices
Maple syrup
Strawberries

Instructions
Place all ingredients, except for the avocado oil, into a blender and blend until smooth.

On a lightly greased skillet or griddle over medium heat, cook until the batter starts to form little bubbles and the edges begin to set about 3 minutes. Flip the pancake and cook for another 2-3 minutes or until the pancakes are set.

Top pancakes with sliced bananas, strawberries, and maple syrup.
