Rosemary + Garlic Stuffed Mushrooms, the most delicious Roasted Cauliflower with pistachios, cranberries, and cashew cream, AND a fun twist on garlic bread. All vegan, dairy-free, and perfect for holiday appetizers, easy vegetable side dishes, or small plates meals.

Simple Stuffed Mushrooms with Rosemary and Garlic:
Ingredients

2 pints white or cremini mushrooms
1 cup panko bread crumbs
2 tbsp nutritional yeast
3 garlic cloves, mined
1 tbsp finely chopped rosemary
2 tsp lemon zest
1/2 tsp kosher salt
1/2 tsp black pepper
1/3 cup olive oil, divided
1 handful chopped parsley for serving (optional)

Clean and dry the mushrooms, then remove the stems and place the caps on a cookie sheet with 2 tbsp of olive oil. Toss to coat and place the mushrooms upside down on the tray.

Then combine the panko breadcrumbs, nutritional yeast, garlic, rosemary, salt and pepper. Mix to combine and then add 3-4 tbsp of olive oil and mix well.

Then press the breading into each mushroom cap, forming a dome shape on top, and place on a cookie sheet. Try to space the mushrooms out so have an opportunity to brown nicely in the oven.

Bake for 15 minutes or until tender and golden brown on top. Finish with a handful of chopped parsley, a squeeze of lemon juice, and an extra sprinkle of salt on top if desired. Enjoy!
