Recipe for the Dough I used in this tutorial is below. The texture is perfect for me, not too soft and not to chewy. It’s a 1:1 ratio for tapioca starch to rice flour.

2 cups tapioca starch
2 cups rice flour
2 1/2 cups boiling water

If you want a more chewy texture try this recipe which is a 2:1 ratio for tapioca starch to rice flour:

2 cups tapioca starch
1 cup rice flour
1 1/3 cup boiling water
