A while back I came across a video from@EthanChlebowski making poblano tacos, so I tried them myself & now I crave them often.

Ingredients
3 x Poblano Peppers
8oz Monterey Jack Cheese
~ 1.5lbs Steak
Olive Oil to sauté the meat
2 x Limes (one for marinade, one for garnish)
Tortillas of your choice
Sour Cream & Salsa
Beans served on the side

*Seasonings*
~ 1 Teaspoon of each...
Salt
Pepper
Cumin
Garlic Powder
Onion Powder
Paprika
Cayenne Pepper

Directions
Season the meat with all seasonings listed above and the juice of 1 lime, set aside 20 mins. Meanwhile, start prepping the peppers.
Start by removing the stems and seeds, next, burn the outside of the peppers on all sides then place on a covered plate to steam 5 minutes. ( I use a gas stove so I put them directly on the flame....you can use an electric stove, just place them on the burner or if you have a cast iron comal pan that might work too?
Peel the peppers & set aside.
Time to cook the meat.
Add a couple tablespoons of olive oil to a hot skillet. (Med-High)
Sauté meat 2 minutes, flip, sauté another 2 minutes.
Cut the peppers & cheese into bite sized pieces. Cook them in batches in a skillet, flipping once. I like mine to have a crispy cheesy crust.
Once everything is cooked, divide out as you wish & serve inside the tortilla of your choice. I've personally enjoyed them both in mini flour tortillas and big burrito style. Both are great.
Add sour cream, salsa, fresh squeezed lime & enjoy. 😊
