RECIPES

Smoked Herb Crusted Prime Rib
Ingredients:
8-9lb Bone In Prime Rib
Sea Salt or Kosher Salt
2 TBSP Cracked Black Pepper
2 TBSP Fresh Rosemary
1 TBSP Dried Oregano
4 Cloves Minced Fresh Garlic
1 TSP MSG
2 TBSP Granulated Garlic
2 TBSP Granulated Onion
2 Sticks of Salted Butter

INSTRUCTIONS:
1. Sprinkle the roast with salt liberally and set aside for 30 minutes to 1 hour to let the salt absorb and penetrate. If you can do this the night before and let it set in the fridge uncovered overnight.
2. Load the Woodfire XL with Smokin Pecan pellets and set it to the smoker setting and 225F (107C) degrees. You can set the time to 5 hours, this does not really matter we will change this in the app later. Press start so the smoker will ignite the pellets and preheat.
3. Melt the butter. Add all of the spices to butter and mix well.
4. Slather the garlic herb butter all over the roast.
5. When the smoker says add food place the roast directly on the grill grate. Add in one of the included probes to the center of the roast. Open the app and select the temperature cook setting, pick a target temp of 115F or 46C degrees.
6. Top off the hopper and reignite as needed. When the target temp is reached take the roast off and tent it with foil. Set the Woodfire XL to Broil (500F or 260C).
7. Once the unit is ready and up to temp add the roast back and cook it until a nice crust develops. It should only take a few minutes. Also watch the internal temp, we are shooting for a final temp of 134F (56C). I pull at 130F (54C) so it carry over cooks and reaches that 134 (56C). Once it hits that 130 (54C) pull it off and tent it to rest for at least 30 minutes.

Details:
- Smoked at 225F (107C) for 3 Hours and 50 Minutes
- Rested for 1 Hour
- Broiled at 500F (260C) For 10 Minutes
- Rested for 30 Minutes

Smoked Mashed Potatoes:

INSTRUCTIONS
1. Set the Smoker to 350F (176C).
2. This is a variation of my Chef Mickey's Parm Mashed Potatoes. Follow that recipe.
3. Once the potatoes are ready, and the smoker is up to temp put the potatoes in an oven-safe dish and pop them in the smoker.
4. Check them every 10 minutes because they will brown quickly.
5. Once they start to brown they are done. You can serve them. If you are not ready to serve them you can cover them with foil and leave them in the smoker. Mine took bout 15 minutes to get a nice color on them. If you are doing this with potatoes you cooked ahead of time and they are cold, once the potatoes get the color you want poil cover them and leave them in until they are warmed through, about 30-40 minutes.
6. Sprinkle with additional cheese before serving.

AJUS Recipe:
Ingredients:
2 Cup Beef Broth
Drippings From Prime Rib
1 Tablespoon Wash Your Sister Sauce
1 TSP MSG
2 TBSP of butter
Salt & Pepper to taste

INSTRUCTIONS:
1. Add all of the ingredients to a saucepan over medium heat.
2. Stir and simmer for 10-15 minutes until slightly reduced.
3. Season to taste with salt and pepper.
