Lamb dumpling ingredients: for making 70 dumplings
Dough:
Dumpling flour, or flour for making steamed buns, or all purpose flour: 400 g
Salt: 1 g
Water: 192 g (baker’s percentage 48%)

Lamb dumpings fillings:
Lamb leg: 500g
Five-spice powder: 1/8 tsp
Sichuan peppercorn powder: 1/8 tsp
White pepper powder: 1/4 tsp
Ginge paste: 1 tbsp
Regular soy sauce: 2 tbsp
Salt: 1/4 tsp
Chicken broth: 150 g, 1/2 cup + 1 tbsp+2 tsp
Oil: 3 tbsp
Sichuan peppercorns: 2 tsp

Dipping sauce:
Regular soy sauce: 1 tbsp
vinegar: 1 tbsp
water: 1 tbsp
sesame seed oil: 1/4 tsp
Sichuan pepper oil: 1/4 tsp
chili oil: as needed
