Meet Deborah Torres of Atlas Monroe!

Back in September 2022, the Vkind team flew to NY for the Plant Based World Expo event where we were able to meet incredible influencers, innovators, and CEOs of vegan brands and really get to know their stories. We had so much fun and we want to introduce you to the incredible people from around the country who are making a difference in the world. Today we bring you Deborah Torres of Atlas Monroe.

When Deborah’s father was diagnosed with type 2 diabetes, her idea to switch to a plant-based diet for 90 days was a bit radical, but life-changing! Her father was completely healed within those 90 days and the results helped change the minds of the entire family - everyone should and will remain vegan! However, within the first couple weeks of sole greens and fruits, getting hangry and fighting over crumbs, Deborah knew that more changes needed to be made.

This is when she realized that even though they don’t need meat, they still need sustenance. They still craved certain flavors and textures and they needed to come up with some kind of recipes before they went back to animal-based. Deborah got creative in the kitchen and started making raw tacos, lasagna, pasta, chicken nuggets, and so much more, but she couldn’t stop there.

Food, meal-prepping, and eating with family and friends is an intimate and integral area of life. We eat several times a day, we spend a good amount of our lives preparing and eating food and of course, we want it to be amazing. It should be an enjoyable experience. When Deborah was just getting started with her family’s diet, there really weren’t many vegan soul quenching, grounding foods that we (most) have grown up on.

There was no fried chicken, there were no ribs, no pork chops, and not many of the meaty textures or flavors that could make the switch to a vegan diet a swift transition. Cue Atlas Monroe. Deborah Torres took it upon herself to dive head first into the kitchen and figure it out. Nobody is going to make the exact meals to fit your palate, plus it’s fun and exciting to get crafty in the kitchen and find what you love now using just plants.
