Today I'm sharing my best chicken satay with peanut sauce recipe! This satay recipe is a blend of Indonesian and Thai chicken satay. It is one of the most flavorful street foods that can easily be made at home. Try my delicious chicken satay as an appetizer for your next party or an easy meal that you can enjoy over the week!

INGREDIENTS:
1 lb/450g chicken thighs (boneless,skinless)
10 skewers (bamboo)

MARINADE
1 tbsp thai red curry paste
2 cloves garlic
1/2 inch ginger
1 stalk lemongrass
1/4 cup/60ml coconut milk
1 tbsp curry powder (1/2 tbsp coriander powder + 1 tsp cumin powder + 1/2 tsp turmeric)
1/2 tbsp sugar (brown, white or palm)
salt (to taste)

PEANUT SAUCE
1 tbsp Thai red curry paste
1 tbsp Masamman curry paste (or red curry paste)
4 tbsp peanut butter
1.5 cups/350 ml coconut milk
1 tbsp sugar (brown, white or palm)
1 tsp oil
lime juice (to taste)
salt (to taste)
