GULATI WRITTEN RECIPE :

Ingredients :
Sella rice soaked ½ kg
Sugar ½ kg
Clarified butter ½ cup
Whole dried milk 250 gm
Almonds and pistachio sliced 2 tbsp
Green cardamom 6
Ash gourd sweets (finely chopped) 125 gm

METHOD :
Soak rice for 2 hours, boil till full done. Heat ghee in a pan, add 6 chopped small cardamom with ½ cup water and ½ kg sugar, cook stirring till sugar melts, add in khoya, cook till khoya dissolved and slightly brownish, add boiled rice and keep stirring, add pethy ki mithai chopped, almonds and pistachio, mix leave to cook on dum till done.


ZAFRANI KOFTAY WRITTEN RECIPE :

Ingredients :
Mince ½ kg
Onion 2 + 2
Ginger garlic 1 tbsp
Allspice 1 tsp + ½ tsp
Roasted gram 2 tbsp
Poppy seeds 2 tbsp
Yogurt ½ cup
Saffron ¼ tsp
Screw pine water 1 tsp
Oil ½ cup
Chili powder 1 + 1
Salt 1 + 1
Coriander powder 2 tsp
Cumin roasted & crushed 1 tsp
Coriander leaves 3 tbsp
Green chilies 3 – 4

METHOD FOR KOFTAY :
Boil half mince in 1 cup water, when dries remove. Grind the raw and boil mince and 2 onions together in a chopped with grinded gram, poppy seeds, salt, chili powder, allspice, mix well, make into balls and shallow fry.

METHOD FOR GRAVY :
Brown onions, grind the onions, add to the oil with ginger garlic paste, coriander, cumin, chili powder, salt, allspice and yogurt, fry well, add 1 cup water, add the fried koftas, leave it on dum, lastly add allspice, kewra and saffron.
