FOR THE STREUSEL TOPPING:
100 grams (1/2 cup) granulated sugar
100 grams (1/2 cup) brown sugar
75 grams (2/3 cup) all-purpose flour
1 teaspoon cinnamon
large pinch of salt
56 grams (1/2 stick, 1/4 cup) butter, melted

FOR THE CAKE:
240 grams (2 cups) all-purpose flour
200 grams (1 cup) granulated sugar
10 grams (1 tablespoon) baking powder
1/2 teaspoon salt
2 teaspoons apple pie spice (*see note for substitution)
225 grams (about 2 cups) finely grated apple (you can leave the peel on)
2 large eggs
113 grams (1/2 cup) neutral oil (canola, vegetable, safflower) or melted butter
75 grams (1/3 cup) milk (any percentage or non-dairy)
2 teaspoons vanilla extract
1 tablespoon orange zest (optional)
100 grams (1 cup) chopped toasted pecans or walnuts (optional)
