Recipe:
- 3-4 big leeks, only the white part and a little bit of the green
- 1 carrot
- 1 chili
- 1,8 lbs/800g pork neck
- Vegetable oil for searing the meat and again for the vegetables
- 2 tablespoons flour
- 1 cup/240ml red wine
- 1 cup/240ml passata or canned tomatoes
- 2 cups/480ml water
- 1,5 tablespoons sweet paprika
- 1 teaspoon dried oregano
- About 1 teaspoon black pepper
- Salt to season
