It’s another beautiful day and today I’m going to share with you how to make a stuffed chile relleno casserole, now let me tell you if you love chile rellenos but dislike the process of making them or you don’t like the oil, well you are going to most definitely loooove this recipe! ‼️tip - after 30 minutes check on the casserole, insert a toothpick and if it comes out clean it is done!

Roast peppers, place in bag allow them to sweat for 15 minutes, peel, remove seeds and steam

Ingredients:
For the picadillo
1/2 onion
1 Roma tomato
1 jalapeño
1 lb ground beef
1 potato
1 minced garlic clove
1 tsp oregano
1 tsp ground cumin
1 tsp black pepper
Salt
For the casserole
6-8 roasted poblano peppers
6 eggs at room temp
1/4 cup heavy cream
1/3 cup APF
1 tsp salt
1/2 tsp black pepper
1/2 tsp baking powder
Queso Oaxaca and medium cheddar cheese
For the sauce
4 Roma tomatoes
1 jalapeño or Serrano
4-10 chile puya( this chile is spicier than guajillo but less spicy than chile árbol)
1/8 onion
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
1/4 tsp ground cumin
Salt
