Hello Friends! I'm so excited to share this delicious and healthier-than-the-original Cheese It cracker recipe! I love crackers, but I often can't pronounce the ingredients on the box! I have a friend who's child gets very sick from eating processed foods (but you know how much kids eating crackers), so her mom and I came up with a Cheese It recipe that has since become a huge crowd pleaser! I love this recipe, it's so simple that children can help you make it, and it's absolutely delicious! You also don't have to worry about developing gluten so this recipe is perfect for a beginning sourdough connoisseur. I think you'll love the way these crackers turn out! Sourdough Cheese Its

1 C starter
1/2 cup water
1/4 c melted butter
2 C flour
1 tsp salt
8 oz shredded cheese of choice

Step 1. Mix starter, water, melted butter together until well combined

Step 2. Add flour and salt to mixture, and mix until completely combined.

Step 3. Add shredded cheese to dough, mix with hands until you have a well mixed ball of dough.

Step 4. Cover and let sit on counter for 12- 16 hrs.

Step 5. Split dough in half, and shape each half into rectangle. Sandwich dough between parchment and roll out until 1/8 inch thin, or as thin as you can.

Step 6. Remove top piece of parchment and cut the crackers into desired shape, about 1 inch sq. Poke each cracker twice to keep them from puffing up too much while baking

Step 7. Leave on parchment, and Bake in over for 25-30 mins at 350 degrees. Turn off oven and leave cracked, allow crackers to cool in oven. Then break apart and enjoy!
