This cashew cream mushroom pasta is such a gem, a wonderful dish to add to your arsenal! If you love creamy pasta and you love mushrooms, you have to try this recipe.

Traditionally this type of dish is made with lots of cream that can sometimes feel too rich and leave us feeling really heavy. This pasta is still very creamy and indulgent but it won’t be too much for your stomach to handle.

MUSHROOM PASTA:

1 lb mixed mushrooms (king trumpet, shitake, chanterelle)
220 g quinoa fusilli
3 medium shallots
4 cloves of garlic
1-2 cups cashew cream
1/2-1 cup pasta cooking water
1 tbsp. tamari sauce
Fresh thyme
Parsley
Parmesan cheese
