This healthy porridge is wholesome and comforting! I added steel-cut oatmeal for additional nutrients.
Serve 6-8
1/2 Kabocha squash
Handful of long beans
3 slices ginger
10-12 shiitake mushrooms, soaked
1 cup rice
1 cup steel-cut oatmeal
16 cups water ‘ broth
1 tbsp salt
1/4 tsp white pepper
Garnish (optional):
1 Chinese cruller
Roasted peanuts
