Dry Ingredients

2 cups (300 g) vital wheat gluten
¼ cup all-purpose flour
4 tsp onion powder
2 tsp garlic powder


Blender Ingredients

extra-firm block tofu
1 and ½ cup water
2 tablespoon vegetable oil
2 tablespoon mellow white miso paste
2 tsp fine sea salt or kosher salt
2 tsp nutritional yeast flakes
1 tsp poultry seasoning

Simmering Broth

Enough water to fill the pot
4 large onions, peeled and quartered
4 ribs celery, chopped
2 carrots, unpeeled and chopped
1 handful parsley stems (leaves removed and saved for the pan-glaze and garnish)
8 cloves garlic, crushed
⅓ cup nutritional yeast flakes
2 tablespoon soy sauce
4 tsp sea salt
2 tsp surgar
8 sprigs fresh thyme or 2 tsp dried thyme leaves
2 tsp dry rubbed sage
1 sprig fresh rosemary
2 bay leaves
1 and ½ tsp whole peppercorns

Pan-Glaze Ingredients
3 tablespoon non-dairy butter or margarine
1 tablespoon soy sauce
¼ cup dry white wine
1 tsp each minced fresh rosemary, sage and thyme
pinches of black pepper
