In preparation for the holiday season here are three Keto Stuffing Recipes and yes, I wanted to share different flavors of stuffing, not the traditional recipe, so you have options. Do ensure you use a Keto Bread that’s low in carbs and toasts well. For all three recipes I used the Macadamia Bread recipe, except I used Cashew Butter instead of Macadamia. I managed to find a really good traditional-style keto stuffing recipe. I wouldn’t change anything.

CHERRY, BACON & HERB STUFFING

8 Servings

Nutritional Information for the Whole Recipe Excluding the Bread:
Cal: 1611 | Net Carbs: 13.1g | Fiber: 1.5g | Total Carbs: 14.6g | Fat: 140.8g | Protein: 69.2g

Ingredients:
20g/2 tbsp Olive or Avocado Oil
60g Unsalted Butter
200g Bacon
30g/1/3 cup Onion, diced
2 Garlic Cloves
5g/2 tsp Ground Coriander
5g/2 tsp Ground Cumin
Fresh Parsley, Thyme, Oregano leaves, finely chopped
Zest of 1 Lemon
80g dried sour cherries, soaked for 5 minutes in boiling water, drained, chopped
200g Keto Bread Crumbs or Croutons



PUMPKIN PECAN STUFFING

10 – 15 Servings

Nutritional Information for the Whole Recipe Excluding the Bread:
Cal: 3156 | Net Carbs: 26.6g | Fiber: 16g | Total Carbs: 42.7g | Fat: 302.7g | Protein: 85.1g

Ingredients:
150g/ 2/3 cup Unsalted Butter
30g/1/3 cup Onion, diced or coarsely grated
2 Garlic Cloves, crushed or 12g/ 1 tbsp Crushed Garlic
Optional: 200g/ 1 & 1/3 cups Bacon, finely chopped (or bland meat)
200g/1 ½ cups coarsely grated Pumpkin, raw
150g/ 1 & 1/3 cups pecans, finely chopped
4g/ 1 tbsp finely chopped rosemary
200g/ 2 ½ cups Keto Bread Crumbs or Croutons


ITALIAN SAUSAGE STUFFING

Serves 10 (2 Balls)

Nutritional Information for the Whole Recipe Excluding the Bread:
Cal: 1752 | Net Carbs: 24.3g | Fiber: 12.1g | Total Carbs: 36.4g | Fat: 136.4g | Protein: 101.5g

Ingredients:
20g/ 2 tbsp Olive or Avocado Oil
500g/1lb 2oz Italian Sausage, casings removed and diced
30g/ 1/3 cup Onion, diced
60g/ ½ cup Unsweetened Dried Cranberries
¼ tsp Ground Cloves
½ tsp Ground AllSpice
3g/1 tbsp fresh Sage, chopped
76g/ 1/3 cup Butter
2 Eggs, beaten
60g/ ½ cup Parmesan or Mozzarella cheese, grated
85g/1 cup Keto Bread Crumbs or Croutons
