Today I'm sharing how to cook shirataki noodles! This is my secret for making them taste good so you can use this low carb noodle in any recipes! I'm also sharing two of my favorite low carb shirataki noodle recipes so you can give them a try!

Tuna and Noodle Salad with Toasted Sesame Dressing

Ingredients:
1 package shirataki noodles, rinsed and drained
1/2 cup cabbage, shredded
1/2 cup red bell pepper, thinly sliced
1/4 cup radishes, thinly sliced
1 can skipjack wild tuna, drained
2 tbsp tahini
1 tbsp coconut aminos or tamari soy sauce
1/2 tsp toasted sesame oil
Optional toppings: sesame seeds, chopped scallions, cilantro, lime juice, red pepper flakes
Instructions:
Bring a small saucepan of water to a boil. Lower to simmer. Add shirataki noodles and boil for 2-3 minutes. Drain and add to a serving bowl. Add the cabbage, red pepper, radishes, tuna to the noodles. In a separate bowl, whisk together the tahini, coconut aminos, and toasted sesame oil. Add a little water to thin the dressing if necessary. Pour the dressing over the noodle salad and toss to combine, breaking up the tuna and ensuring all the noodles are coated in sauce. Top with optional toppings, serve, and enjoy.



Pesto Chicken Noodle Salad

Ingredients:
1 package shirataki noodles, rinsed and drained
1/2 cup frozen green beans
1/2 cup frozen peas
8 oz shredded or cubed chicken breast (or 1 cup chickpeas)
1/3 cup prepared pesto
1/2 lemon, juiced
Optional add ins: halved cherry tomatoes, feta, goat, or Parmesan cheese, toasted pine nuts, walnuts, pumpkin seeds
Instructions:
Bring a small saucepan of water to a boil. Lower to simmer. Add shirataki noodles, green beans, and peas to water and cook for 3 cups. Drain the noodles and vegetables and add them to a serving bowl. Add the chicken (or chickpeas), pesto, and lemon juice. Toss to combine so all pesto is incorporated. Garnish with optional toppings, serve, and enjoy.
