Maklouba upturned rice with eggplant:

A meat-based dish is cooked with lots of well-scented spices which will release all their aromas and give an inimitable taste: rice and eggplants, potatoes, fried onions placed in a mold and mounted upside down. which will then be turned over when serving, hence its name Maqluba, maqlouba, which translates to “overturn”: upturned rice with eggplant, potatoes and meat.
