Gingerbread Cookies šŸŽ

ā¤ļø Almost Classic Vegan Gingerbread Cookies

1 tablespoon flaxseed meal
2.5 tablespoons water

1/4 cup (60 g) vegan butter
1/4 cup (64 g) peanut butter
1/4 cup (60 ml) molasses
1/2 cup (80g) coconut sugar
3/4 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

1/4 teaspoon fine sea salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups (180 g) whole-wheat flour, more for sprinkling

ā¤ļø Maple Almond Flour Gingerbread Cookies

Just shy of 2 1/2 cup (250 g) almond flour
2 tablespoons brown rice flour
1/2 teaspoon cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon allspice
1/4 teaspoon black pepper
1/2 teaspoon nutmeg
1 tablespoon coconut oil
7 tablespoons (100 ml) maple syrup

ā¤ļø Very Healthy Gingerbread Cookies

flax egg
1 tablespoon flaxseed meal
2..5 tablespoons water

Dry
2 cups (200 g) oat flour*
1/4 cup (30g) tapioca starch
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 teaspoon baking soda
Wet
1/4 cup (60ml) maple syrup (honey)
2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract

ā€¢ If using ground oats make sure to sift them - we want only fine part to remain to make sure dough is homogeneous and soft
