How to make CHEESY BEEF BIRRIA TACOS & CONSOMÉ!

Hi everyone!
You are going to absolutely love this cheesy beef birria taco & consomé recipe! These tacos are insanely delicious and the consomé (broth) is to die for!!! Trust me, this recipe is a crowd pleaser!

Recipe:
2 beef bones (approx 2lbs total)
5lbs chuck roast/ chuck steak (you can even use bone-in chuck…if so, omit the beef bone)
1 large onion
1 whole garlic
15 guajillo chiles
2 handfuls of bay leaves
4 heaping tablespoons of chicken bouillon
1 tablespoon of salt

Chili oil:
3-4 guajillo chiles
1/4 teaspoon ground clove
Ground pepper to taste
1/2 tablespoon of oregano
2 tablespoons chicken bouillon
1/2 tablespoon garlic powder
1/2 tablespoon paprika
1/4 teaspoon sugar

Spicy add 1/2 teaspoon of ground cayenne pepper, & add a little at a time for desired spiciness.

Salsa Puree:
1/2 jalapeno
1 poblano
1 Italian long hot chile pepper
2 chipotle
1 guajillo
1 garlic clove
7 árbol chiles
1 cup water
2 teaspoons chicken bouillon

Toppings
1/2 chopped onion
1 bunch of cilantro
Lime wedge (optional)

Birria Tacos:
Corn tortillas
Handful of mozzarella cheese for each taco
