豉汁排骨意大利粉

材料:
急凍排骨半磅
意大利粉350克
紫洋蔥半個
蒜蓉醬
豆豉醬
檸檬葉適量
辣椒仔一隻

處理:
1. 排骨,清水解凍。
2. 排骨已解凍,倒去水分,加入粗鹽一湯匙,乸10分鐘,去除雪味、腥味,及加入少許鹹味。
3. 洋蔥,去皮,切條。
4. 排骨,清水沖洗乾淨,擎乾水,廚紙索乾。

烹調:
1. 白鑊,放排骨,大火煎香。
2. 另一邊,大火煲滾一鑊水。
3. 排骨,轉慢火,加入調味料:
a. 蒜蓉一茶匙
b.豆豉醬一茶匙
c. 豆瓣醬一茶匙
轉大火,炒勻,轉最慢火,加入老抽一茶匙,炒勻,轉大火,加入大滾水蓋過排骨面,冚蓋,大火滾起,轉中慢火,燜15分鐘。
4. 另一邊,水已燒滾,加入鹽2茶匙,扇形放意大利粉,大火滾起,冚蓋,轉最慢火繼續煮。
5. 檸檬葉,切碎。
6. 辣椒仔,去籽,切碎。
7. 意大利粉已煮至軟身,轉大火,滾起,熄火,繼續焗。
8. 排骨已燜熟,加入洋蔥,轉大火,加入糖2茶匙。
9. 預備一飯碗清水,加入生粉2茶匙,攪勻,加入排骨內,繼續燜。
10. 意大利粉,擎乾水,放碟上。
11. 排骨已燜了15分鐘,放意大利粉上。
12. 灑上檸檬葉碎及辣椒碎。
13. 完成 ,可享用。

Pork ribs spaghetti in black bean sauce

Ingredients:
Frozen pork ribs 0.5 lb
Spaghetti 350g
Onion (purple) half No.
Garlic sauce
Black bean sauce
Bay leave appropriate amount
Chili 1 No.

Preparation:
1. Pork ribs, defrost in tap water.
2. Pork has been defrosted, pour away water. Add in 1 tbsp of cooking salt, season for 10 minutes, to remove unpleasant smells and add some salty tastes to it.
3. Onion, get it peeled and shredded.
4. Pork ribs, rinse with tap water. Drain. Dry with kitchen towels.

Steps:
1. Plain wok, put pork ribs, fry well at high flame.
2. On the other side, heat up a wok of water at high flame.
3. Pork ribs, turn to low flame. Add seasoning:
a. Garlic sauce 1 tsp
b. Black bean sauce 1 tsp
c. Chili bean sauce 1 tsp
Turn to high flame, fry well. Turn to the lowest flame. Add in 1 tsp of dark soya sauce, fry well. Turn to high flame. Add in boiled-up water just covering up the pork. Cover up the wok. Heat up at high flame. Turn to medium-low flame and braise for 15 minutes.
4. On the other side, water boils up. Add in 2 tsp of salt, put spaghetti into the wok. Cover up the wok. Heat up at high flame. Turn to the lowest flame and continue boiling.
5. Bay leave, chop well.
6. Chili, remove seeds. Chop well.
7. Spaghetti has been softly boiled, turn to high flame. Turn off fire after boils up. Leave it aside.
8. Pork has been braised well, add in the onion. Turn to high flame, add in 2 tsp of sugar.
9. Get ready a bowl of water, add in 2 tsp of tapioca starch. Mix well. Pour into the pork, continue braising.
10. Spaghetti, get it drained. Put on plate.
11. Pork has been braised for 15 minutes, put on top of spaghetti.
12. Put bay leaves and chili cubes on top.
13. Complete. Serve.
